Philosophy
Our roots reach back to Italy’s Piedmont, where we ran our own bar and restaurant as well as a mountain lodge in the Montgenèvre Alps. We developed a passion for sourdough baking, and the traditions of Occitania and Savoyard recipes left their mark on us too.
Ghinefle, stracotto, polenta — mountain recipes that can’t be missing in the Italian forests. Fassone Piemontese, truffles, vermouths, Barolo — the heart of Turin’s gastronomy.
Glocal and no waste. For us these aren’t just phrases on paper, but hard work. We import most of our ingredients ourselves, directly from producers, farmers and growers. We know them personally — it’s family. Our roots are in Piedmont, but you’ll also find touches of other regions here.
And today? Madama Cristina is a piece of Piedmont in the heart of Brno.

“We were pleasantly surprised to find beef tartare made from the Italian Fassone breed here in Brno. We had eaten it on our last holiday in northern Italy, so we were thrilled. The pasta was good too, and the service was fine. A beautiful place, we will definitely be back.”

They kindly moved our table too — we were originally seated on the terrace, but it was quite windy. We all had the lunch menu plus some desserts. A lovely time.
